Giant Steps Wombat Creek Vineyard Chardonnay is handpicked from the highest altitude vineyard in the Yarra Valley. Because of its altitude, it has an extremely cool climate.
The fruit is sorted in both vineyard and winery. Whole bunch pressed it is coarse settled to new and seasoned French oak puncheons where it ferments with indigenous yeasts.
The wine matures for 9-10 months, with some parcels undergoing spontaneous malolactic fermentation. After coarse filtration, it is bottled via gravity.
Pale green straw, Giant Steps Wombat Creek Vineyard Chardonnay is light bodied with steely fruit flavours and a long, dry finish. Cellaring potential is five years.
